Enjoy!: Smoked Mozzarella Fonduta Ingredients: 1 loaf Italian bread, such as ciabatta or semolina, sliced into 1/4-inch slices 1 c. sour cream 1 tsp. thyme 1/2 tsp. crushed red pepper 1/4 tsp. cayenne pepper 3 c. shredded mozzarella or smoked mozzarella cheese* 3 c. shredded smoked provolone or provolone cheese* 3 Tbsp. grated Parmesan cheese 3 Tbsp. grated Romano cheese 1/4 cup fresh diced tomatoes Fresh chopped parsley Directions: (*This recipe calls for one of these two cheeses to be smoked and one to be regular) Arrange sliced Italian bread flat on a baking sheet and cover with foil. Set aside until ready to use. Preheat oven to 450 F. Combine sour cream, thyme, red pepper, cayenne pepper and four cheeses in a large bowl and blend thoroughly. If serving family style, spray an 8" x 10" casserole dish with pan spray, then use a spatula to transfer the mixture. Using a large spoon, spread cheese mixture to create an even surface. Place casserole dish on center rack in oven. After five minutes, place baking sheet with bread, still covered, on top rack in oven. Bake for an additional five minutes. Remove bread and fonduta from oven. Garnish casserole dish with diced tomatoes and parsley in center of fonduta. Arrange bread slices around bowl(s) and serve immediately. Sounds so yummy!!!! Middle East and North Africa	FRIDAY	I was suppossed to go the Islamic center today for prayer, and am sick. My allergies are acting up so bad, i wanna cry. So i called the lady i was to meet and said i'd come next week. She said fine, she was hoping i'd come today cause the speaker is from Morocco. Darn. Well my loss. I'm going to share it with my daughter for her home. Like I know..I would totally need literature if given down time. But I would add to that list..a good book or two. Jackie I like the whiskey idea to shut someone up, that made me laugh. And lighters...I guess all the candles in the world wouldn't help if ya didn't have a lighter! Your right Jackie, that list could be used for anyone of us who maybe caught in a situation where we lose electric or know that cause of a storm(snow,rain) that we can't get out of our houses to go to the store! He got sent to Houston and I learned that they will be living in like a tent city cause there are no rooms there. I feel so bad for him. But she charges her phone on her car charger and sits in the air for a bit. So hopefully soon they will have electric, she said it could be an hour to a month. They have no idea. Add the flour mixture and sour cream alternately to the butter/eggs/sugar mix, beating for about one minute after each addition. Generously grease 2 loaf pans or a bundt pan and pour in batter. Tap pan on hard surface to force air bubbles to rise. Loaf pans bake for an hour, bundt pan takes slightly longer. Test with toothpick for doneness, as it may take little longer to bake depending on your oven. Once cake has cooled enough to handle, flip onto a serving platter and top with glaze. Allow glaze to soak in before serving. Great for dessert, breekie, or snack. Also tastes good toasted and topped with jam or preserves. Glaze ½ c butter (melted) ¾ c OJ 1 c sugar (granulated or powder) You may wish to experiment with proportions on the glaze to suit your liking. This makes a very thin glaze, but you may want to thicken it with cornstarch or reduce the liquid content to make a spreadable paste.
