I had my medical done in Tokyo last month.
The procedures were quite simple. They were;
- Chest X-ray
- Blood test
- Inquiry of medical history, smoking and drinking habit, etc
- Skin check by a male doctor

It took only 30 minutes. There is nothing to worry about.

It also depends how well prepared you and your fiance are before receiving the packet 3 from the embassy.
I would recommend your fiancee to go get her police certificate and medical exam as soon as you get the NOA2.
If she has everything needed for her interview when the embassy gets your case from NVC, she can request her interview through their website.
You don't necessarily need to wait till NVC/the embassy contacts you for her interview date.

Her interview is more likely to be scheduled a month after the submission of request.

If you have lived in Korea more than 6 months and get married now, it is definitely faster to go for DCF at the US embassy Korea.
I am not exactly sure how long it takes in Korea, but the chances are high that you get your fiancee's immigrant visa in 3 months.

You can plan things for your wedding in advance, but don't set a date until the visa is in hand.
Remember, K-1 is good for 6 months and you have 90 days to get married in the US.
That means you have 9 months to plan your wedding upon receiving the visa in hand.

I won't jeopardize the whole process by entering the US when you are about to get the visa even the ceremony is nothing legal.

They got married two years after she arrived at the US, filed AOS and got her GC with no problem.

Are you going to marry her right after she enters the US?
Non-immigrant visa is issued on the basis that the applicant eventually goes back to their country.
It can cause a problem if you marry her right after the entry to the US and file AOS.
It can be seen as abuse or fraud by USCIS.

According to title 8 of the CFR part 205, they don't automatically revoke a petition unless any of the reasons listed in part 205 kicks in.
