Removing Conditions on Residency General Discussionaffadavits required?

We are starting the process of removal of conditions and I am looking at the USCIS's list of instructions, and it gives a list of documents.  It says "the documents should include, but not be limited to..." and one of the things on the list is "Affidavits sworn to or affirmed by at least two people who have known both of you since your conditional residence was granted and have personal knowledge of your marriage and relationship."

Does this mean that affadavits are required?  I feel like I read somewhere that affadavits are not considered good evidence, and only need to be included if you don't feel you have sufficient evidence.

Also, if we have the following evidence:  Joint tax returns, joint bank accounts, joint car loan, joint insurance policies and a joint mortgage, do I really need to include pictures and christmas cards, etc?   I feel like almost silly sending in that kind of stuff at this stage in the game.

Thanks in advance for the help!

K-1 Fiance(e) Visa Process & ProceduresTraveling abroad during process before AP is approved
My fiance and I are working on our initial application for the fiance visa and we were planning on him coming to the US summer next year. To complicate matters, my best friend is having a destination wedding in Mexico in June and I really want Zac to be able to come! We are looking at getting married and filing the AOS (along with AP) as soon as we can when he gets here, but there is no way the AP would be approved before we would need to leave for Mexico! Is there any way for him to get a separate tourist visa or something to go to the US and Mexico and then come back into the US on the fiance visa?? Or is there any other way to do this??? At this point we feel like the only option is to either postpone the fiance visa process (which we REALLY don't want to do) or really speed through it so that his AP is approved by summer!! HELP!

K-1 Fiance(e) Visa Process & ProceduresWhat if I am currently making enough income, but haven't for the entire last 3 years?
I started a job last year, from which my salary is well over the required amount. But, only one year's tax documents will show that. Is it really necessary to show the last 3 years documents? Or is it enough to have been making a good salary for a year and a half?

K-1 Fiance(e) Visa Process & ProceduresI live in Missouri, where do I send the I-129?
Does the Nebraska service center process I-129 forms? or should I send it to the Dallas Lockbox? On the processing times for the Nebraska service center it just had a date from a few years ago, leading me to believe they no longer process these forms...

K-1 Fiance(e) Visa Process & ProceduresAre there any forms for the I-129f petition that need to be notarized?
I read somewhere that the intent to marry affidavit needs to be notarized. Does it? And is there anything else at all that you send in with the I-129 that needs to be notarized?

K-1 Fiance(e) Visa Process & ProceduresWhat did you include as proof of having met and ongoing relationship?
I am preparing the I-129 and I have seen lots of "examples" of what to include as proof for having met and of an ongoing relationship. Pictures, of course! Travel documents for the meeting, call records, etc. There is lots of "suggested" evidence, but I am curious... for those of you that have made it successfully through the process, what specifically, did YOU include as evidence?? I feel kind of overwhelmed and want to make sure that I include enough without driving the reviewer nuts with paperwork!

Also, what kind of evidence will I be asked for in the future... in future NOA's and at the interview?

Thanks so much!!

K-1 Fiance(e) Visa Process & ProceduresG-325A what is meant by "Alien Registration #"?
On the G-325A, what is the Alien Registration Number? And under what circumstances would you have one and need to list it?

Also, how important is it to have your work history on the form if you are the beneficiary (ie not the financially responsible party), of course I know the sponsor needs to have a work history!

K-1 Fiance(e) Visa Process & ProceduresTotal overall costs for this journey (K-1)?
The fee for the Adjustment of Status (after you have been married) is $1010 right now, and if you file for the Employment Authorization and the Advanced Parole at the same time as the Adjustment of Status you don't have to pay extra fees for those two forms.
