I miss good cheese!!!

So tonight was another variation on the vegetable moussaka. The eggplants are still coming strong but we have seen the last of the zucchini and it looks like the summer squash is now dying off as well crying.gif , I've noticed Joe leaving a lot of the eggplant on his plate lately and he just told me that he really doesn't like eggplant. Great! Now, he tells me after we have been growing it for 4 years, hehehe. Ok, maybe we won't grow it next year - but I sure do like it.

laughing.gif That's so cute that he told you after 4 years

Well, I haven't even seen my Mom since we got back to Calgary - which has been a week by the way! Have just been too tired for going out visiting and busy too - and she does not visit - basically unless you go to her or take her out, you aren't going to see her laughing.gif

Might do that today - but if not, perogies are on the menu - with what else - I do not know.

OK, maybe showing my ignorance here... blush.gif What are perogies??

Perogies are so good! They're like a potato pasta, shaped like a half moon and stuffed with different goodies like cheese, onion, bacon, etc. They are a Polish dish originally but have become quite popular in North America! And you can fry or boil them and serve with sour cream

We had lebanese today at a restaurant called "Open Sesame." I decided to try a vegan dish called "Filafel" which had Filafels (um...I'm not entirely sure what the filafels were made out of, but I think they were made out of alfalfa sprouts, chick peas and fava beans, then formed into a burger shape.) It also came with a yummy mediterranean salad and hummus with pita to dip. All in all, the meal was actually very yummy...my husband and I are going to try going vegan (or vegetarian if he can't handle the limitations) next month, so this was a good introduction smile.gif

Oh yummy! Falafel is one of my favourite foods of all time. I've been vegetarian for 15 years now, so if you need any recipes, tips or recommendations PM me smile.gif

Yay Falafel!

Ok so grocery shopping day today woot! Not sure what I shall purchase but I think I would like to have roast beef with potatoes and carrots for dinner tonight!

And you can buy whatever you want, without standing there inspecting the ingredient list for HFCS! good.gif

We had chicken cooked on the grill that I had basted in hot wing sauce. I left off the sauce for Declan, although, with the food he eats, I probably didn't have to, and he still would have scarfed the chicken down!!! We also had peas and pirogies and then I had some pickled asparagus. I let Declan try a bite and he loved it so much, he started pointed to the jar and "requesting" it (aka screaming). He did this every time he was out of asparagus. Dang kid ate almost my whole jar!!! mad.gif

My husbands vegetarian lasagna was okay but not a hit with me so he said he'll eat it all week. laughing.gif

I think its the first thing he's made that I haven't been fond of.

Okay the truth..

I found a hair in it okay? When I find a hair in something I can't eat the rest of it. Yes it was his hair but it still grosses me out. I have major issues, I know! I will work on getting them fixed one day. It was actually quite tasty but ya... I find a hair in food and I won't eat it anymore.

rofl.gif That's soooo me.... I would freak out too, if I find a hair or anything gross in my food it turns me off. Even if it was delicious.

I have issues too, but I don't think mine will ever be fixed laughing.gif

Nev, what's the recipe for the brussel sprouts? Personally, I don't like them (but am willing to give them another shot), but every time we visit hubby's family, they always have a dish of them. So, I guess I should be a good wifey one of these days and make him some. I have actually never cooked them in my life though, so HELP!!! smile.gif

Tonight, we had pork tenderloin, broccoli and cheese, green beans, and pasta.

I just put them in a tin foil wrap, drizzle them with some olive oil, add a little bit of pepper, kosher salt and then some minced garlic... fold up the tin foil and put it in the oven for like 30 minutes or until they're tender and then WA BAM! Best sprouts evah!

I wonder if that would make me like brussels.... haven't had them since I was a little one

I couldn't resist a Costco sample and brought home spinach and artichoke chicken burgers with four cheeses. I've got whole wheat buns. tomato slices and a tossed salad to go with them.

The lady giving out the samples warned me that the burgers have cheese...twice. Maybe I look vegan.

That sounds good! They probably warn people in case of food allergies; as you wouldn't normally find cheese in a burger

Good old Uncle Ben

And good old kraft.

I'm making macaroni and cheese for dinner laughing.gif

It was weird, I was looking at the recipe and it calls for 4 tablespoons of 'spread' - and i'm thinking, 4 tablespoons of butter?? From what I could find the Canadian version only asks for 3 tbsp of butter and - it has more in it - u.s. version is 209 g

Perhaps someone with some Canadian kraft dinner can confirm this!

Anyway, this is pretty tasty.

Checking my last box: calls for 3 tbsp. butter or marg. There is also a "sensible solution" option which only calls for 1 tbsp. I always use 1 tbsp. 3-4 is WAY too much butter

Why do they call butter spread here anyway

Tonight I'm making beef taco skillet - this is SO good!

1 lb. ground beef (or substitute 1 package of soy crumbles as I do for a healthier veg option)
1 can Campbell's Tomato soup (reduced sodium)
1/2 cup salsa
1/2 cup water
6 flour tortillas cut into 1 inch pieces

Cook beef until well browned, pour off fat.
stir in soup, salsa, water, tortillas. Heat to a boil. Reduce heat to low and cook for 5 min. Stir and top with cheese.

I also add corn, onions and peppers.
