CanadaWhat's For Dinner - Part Deux

You make the salsa...
1 onion
1 clove of garlic (minced)
1 jalapeno
2 tomatoes (drained)
salt, pepper and some hot sauce...

I like to use the food processor just pulse it once or twice so its chunky but not too watery.
Cook it in about a tablespoon of olive oil for about 4 minutes until it thickens slightly, take it out, put it aside.

Fry the black beans in the same pan with 1 clove of smashed garlic, mash them lightly with a fork.

Fry the eggs, sunny side up.

Fry the tortillas in a separate pan in some canola oil until they are golden.

Take the refried beans and put them on the tortilla, then add the egg, and then the salsa over top and just a little cilantro for garnish. biggrin.gif

Its sooo good.

Makes 4 yummeh huevos rancheros. biggrin.gif

Well today we're going to our favourite Mexican place for lunch, Las Margaritas.... it's always so good and filling that's all I eat for the whole day, so I won't have any dinner. The margaritas and guac is so yummy luv.gif And the sun is shining so hope to get a spot on the patio!

I like the Morningstar ones much better. I know it defeats the entire purpose of it, but I have a friend who makes them, after he's made a bunch of burgers, so the veggie burger gets all the beef burger juice all over it. It tastes just like a regular burger.

Thanks all!! This is so funny that you mentioned about not having to put a bill in a folder, that's exactly how I felt! I'm so relieved to not have to prove my marriage anymore to anyone!!

Congrats Jill! I just got approved for naturalization as well (May 16). It's nice to be done with USCIS. It feels different being a US citizen ... surreal, actually ... I can't explain exactly, but I feel more like I belong. The other day, the water bill came in and for the first time in six years I realized I didn't have to make a copy of yet another piece of paper and stick it in a file, nor would I have to ever again. Sometimes, the little things hit home ...

It's hard saying the part where you give up loyalty to other countries ... I think it will be easier to say when you think of the tattoo on your back. I remember Flames saying he wore his Canadian Flag socks at his oath ceremony. :) Thank goodness Canada recognizes dual citizenship, even if the U.S. doesn't. Going through this whole process sure makes you feel your Canadianness in a way you never would if you stayed in Canada. You can take the Canadian out of Canada, but you can't take the Canada out of the Canadian. :) Eh!

Hi Everyone, hope all the Canadian VJers are doing well! I had my N400 interview on Friday, which went extremely well :yes: I had this incredibly kind man interview and test me, he was a gentle old soul. We spoke alot about Canada, and really he didn't ask me for any of the ton of evidence I brought! I guess I sent in enough with my application. So I have my Oath on Monday at the Philadelphia Constitution Center! Before I take the Oath though, I went back home last weekend and got a rather large Maple Leaf tattooed on my back! LOL I still get home quite a bit, every 2 months or so. I'm happy that my immigration journey will be officially over Monday, so long USCIS!!

I shop more, and I spend more money. There are bigger stores with more selection here, so its harder to be responsible. I've started to curb that habit a bit. But I'm still cheap, so its a funny mix. I don't eat as healthy as I used to, and I definately eat more fast food. Not a ton, but more; I hardly ever ate fast food up in Canada. I gained 15 pounds then lost 20, but now that Im pregnant its all coming back. I spend a lot more time outdoors now, but here in Colorado there are lots of reasons to be outdoors. I also drive a lot more. I hated driving back home, but now I love it, I'm not really sure why! My "eh" has gone away, but when i go home it all comes back!

I've changed a lot in more meaningful ways, but I think that's mainly due to being married and having a baby on the way, and less about living in the US.

No, from what I hear they no longer provide a temp EAD stamp. Plus, only JFK in the past was the POE that provided it, most POEs did not.

I've been going through a book a week, I love summer reading. Anyway, the one I'm reading now is called "Digging to America" by Anne Tyler, my Mom bought it for me and it's so good. It's about how immigrants feel in America, how they adjust, and how you don't really 'belong' here, but you no longer belong in your home country either....

I know this is no big whoop, but while I'm waiting for the interview to arrive, it's the most exciting thing to me right now. I decided to go back to school after 20 freakin' years to finish my business degree. It started last week. Earlier this week, I got my first assignment back and got 100%. As if I wasn't excited enough about that, I took my first test yesterday and just saw that I got another 100%. Woohoo!! And I thought I was too old to do this. rolleyes.gif
