CanadaWhat's For Dinner - Part Deux
I don't know why that posted twice... anyway here's what we had on friday. Yum!

I bought a pork loin which is too big for the two of us so i cut it into more reasonable sizes and it'll be used for 3 meals i think. This time I marinated it in white wine, olive oil, garlic and rosemary. Closer to dinner time, I chopped up a couple of potatoes, a sweet potato, a couple of carrots, a shallot and some more garlic. I tossed that with some olive oil, thyme, salt and pepper. I put that in a casserole dish, put a couple pats of butter on it, and covered it in tin foil. It went into a 400 degree oven for about 30 minutes, until teh veggies were about half done. Then I took it out of the oven and put the marinated pork on top as well as about half of the marinade. That was baked for another 20-30 minutes until the meat was cooked.

It was so delicious... and easily adaptable to smaller or larger amounts.

In addition to what I made this time, our friend also served pieces of eel lightly sauteed in a sauce made with soy sauce, sugar and vinegar, and thinly sliced roast duck that we could use to put on our sushi rolls. I just stuck to the egg this time so I could be sure it all worked, but I did pick up some octopus to use for the next ones (something else she suggested we try).


I love octopus. Although sometimes i find it a bit rubbery. When I was in japan the best sashimi was the octopus. The little suction cups are fun to chew on. They also had these cute little squid that were so small you just dipped tehm in soy sauce and ate tehm whole! Yum!

I made home made mac and cheese and i sautéed some onions, mushrooms and zucchini and mixed that in with the sauce and macaroni before baking it. Oh yeah, I put in a tonne of garlic. It was really, really good.

My husband asked if we could go vegetarian for a couple of weeks. To see what the cost difference and health difference would be. Fine by me, since i was vegetarian for 10 years before i met him. Also, the marine corps ball is in November and maybe it'll help me to fit in the dress I hope to wear.

CanadaWhat's For Dinner - Part Deux
Tonight we had a pretty delicious chicken pot pie from the cooking light chicken cookbook that my mom in law gave me for christmas. Then my husband asked if I could bake my famous chocolate chip cookies. When they were out of the oven he had the brilliant idea of putting some chocolate icing on top. Very delicious.

These are my cookies. I've made them so many times the recipe is ingrained in my brain.

2 1/4 c flour, sifted.
1 c brown sugar
1 c butter or margarine, softened.
1 tsp vanilla
1 egg
1 tsp baking soda
1/2 tsp salt.
1 pkg Chocolate chips. (semi sweet are best but milk chocolate is ok if you prefer)

Preheat oven to 350.

In a large bowl cream together butter and sugar until smooth. Add slightly beaten egg and vanilla until well mixed. Mix together dry ingredients (except chips) and add to wet. Once it's completely mixed, add in chocolate chips.

Drop heaping teaspoons of dough onto cookie sheet, slightly flatten, and bake for 8 min or until lightly golden brown.

Yum BEER BREAD!!!

My mother in law gave me the recipe for beer bread a while back and i just found it again in my recipe book. She says he always asked her to make it whenever he was home on leave. haha. Super easy and very yummy if you like beer and bread. I tried it twice now using different types of beer. We've tried using an apricot ale which was yummy and sweet, and a guinness type stout which made a richer and darker loaf I just put one in the oven using a wheat ale and it smells pretty good. I love a recipe where just a different type of ingredient gives a completely different flavour!

2 1/4 c flour
3 tbsp sugar
1 tbsp baking powder
1/2 tsp baking soda
1/4 tsp salt
12 oz (1 bottle) beer

-Mix dry ingredients together
-Add beer and mix well. It will be pretty foamy but that's ok, leaving a few lumps are ok too.
-spread in greased 8x4" loaf pan
-bake for 35-45 min @ 400 degrees
-turn out onto rack to cool

Yay! recipes! Thanks Marilyn for pointing me towards this thread.

I think i should share the best brownie recipe i've ever found. It's not what i had for dinner but i think chocolate is very beneficial for anyone waiting for their visa to be approved and missing their SO's. It is from williams-sonoma Baking book.


The BEST brownie

6 oz semisweet chocolate
3/4 c butter cut into chunks
3 large eggs
1 3/4 cups sugar
1/4 tsp salt
2 tsp vanilla
1 cup + 1 tbsp all purpose flour

Heat oven to 350. Butter an 8" square baking dish. Place chocolate and butter in top of double boiler over barely simmering water. Heat, stirring often, until melted. Remove from heat and allow to cool slightly.

In a large bowl, whisk together eggs, sugar, salt and vanilla. add chocolate until well blended. Slowly whisk in flour until well blended. Pour batter into pan, spreading evenly with spatula.

Bake until toothpick inserted in center comes out mostly clean. 35-40 min. Do not overbake. Cool on a wire rack.

Enjoy with a big glass of milk. hehe.

CanadaPanel Physicians..inconsistency preg women now require chest xrays
Part of me feels frusturated by the inconsistencies of this whole process, but I thought panel drs in Toronto seemed to have it together. When they called me back two weeks ago to give me an appt date, I was told by the nice lady I spoke with I needed a letter from my attending GP that I was indeed pregnant and the chest x-ray would be defered. Yesterday when I looked online that seemed to be the case as well.

I emailed them yesterday to request a total mainly bc i wasnt sure if all 3 medicals could be shipped for $50 total or $50 each and I wanted a total so I had the right amount on me and was told "pregnant women are now required to have a chest x-ray"..As of now it still states defered $275..

I made a special trip to my GP to get a note..Luckily she didnt charge me, but still I just wish what they wanted/expected didnt change everyday..

FINALLY..was told pack4 was sent on Mar 13.. which kinda makes me laugh bc on march 13th when i called acc to whoever i spoke with pack3 hadnt been recieved yet and to call back in 2 weeks..

Of course when i go to sched...nothing available?? anyone else looking to sched in montreal? that would want to set up an email notification or text notification? Im home with strep so im good to keep checking today and tomorrow..

I so need an interview ASAP..i really wnat this babe born in the US and time is starting to tick...

yeah hes a sportswriter he solely covers the penguins. So when we are down in a couple weeks for my son to attend hockey tryouts we may not even see him, i was like ill google the address and leave me a key under a mat I guess..I havent seen it yet..:( At least the babe is due end of July and not playoffs, and he will be off most of the summer with us.

Fiance signed to rent a house. He picks up the keys on Monday. That said he prob wont actually move in until we move down which will be ASAP after my interview hopefully.
On all our papers we used his mailing address (he still lives at home with Mom..) as future residence bc we hadnt found a place yet.

When do I let immigration know? He wont be there much as playoffs start this week, who knows where he'll be and when they will finish up and I dont want papers sitting there..I dont think he'll change any of his ID until we officially move in etc..

Do i bring a copy of the lease to my interview? change everything then? Or wait till we send in our marriage liscence/papers etc?

Results from my medical were due today..I too didnt want the 3 hour drive to Toronto again so my results were shipped FEDEX for $50 by the clinic..They will be delivered by 5pm tomorrow. :)

So can one safely assume once you get your medical results (which you arent allowed to open right?) that you have passed? If you had issues they would notify you?

Pretty sure we passed everything but just wondering if they gave the common courtesy lol before you go for your interview or if people get surprised at their interviews? paranoid preggo brain i guess..

And if I cant open it i can assume i can open the fed ex envelope and contents inside will be in a sealed envelope? just want to ensure mine and both kids are in there? and it must be a huge envelope if they send chest xrays?

Haha prob..between that and the 16 hours of driving that ended yesterday so we could go to my sons tryouts.. (and yes we showed the Americans how to play hockey he made first team ) and I havent had any IV fluids this week so Im running on hormones total exhaustion and dehydration..IMO perfect recipe for forgeting something important like our passports on kitchen table..:)

My 10 yr old was born in Canada..His Dad and I were never married and I never pursued any US papers for him..

Today my daughter and I were approved on a k1 visa but they would not give my son one bc in their eyes he already had citizenship? they gave me a form told me i had to get some papers from his dad and to book an appt for a child born abroad interview? I need my sons birth certificate a signed letter of consent from his father to acquire a us passport ot a CRBA? my sons cdn passport and evidence his dad has resided in the US for 5 years??

And of course another $100 for CRBA
And 105 for his passport

Anyone gone through this? We booked an interview for next thurs? will we need anything else? how long? how long before we can get his passport?
Any help would be greatly appreciated..

We were in Montreal last week. daughter and I approved 10 yr old son not.. He now has an appt at American Citizens Services at 8am next thursday..I can not find any info on this embassy.

What do we need to enter the building? Montreal is sending our passports and visas back but not in hand yet?

Is it first come first serve as well? Everyones appts say 8am?

Parking? Nearby hotels? This so was a curveball that this 7 mon preg mamma didnt expect to have thrown at her..Travelling is getting so hard. i just want to settle at our new house in Pittsburgh..but I obviously have to bring my 10 yr old..lol

Also I know in Montreal no one not having buisness at the consulate could enter..but with me having to leave at 3am..Can i bring my 6 yr old daughter with or no?

Thanks guys.. It was obviously an honest mistake. I assumed bc he was born here has always lived here never pursued any US linkage that he was Canadian. I guess I realized he was prob eligible for dual but since I was applying this way and the kids were simply coming with me this was the way to go. Honestly with very little contact between his dad and new wife and I, I didnt even know if he would be agreeable. He has no legal obligation to do so.

I also never realized when I started this procedure a year ago that it would take 11 months to get an interview nor how stressful and trying this would be for our relationship and now nor the health dangers it would put me in and our unborn son..Iam offically off work and as close to bed rest as one can be in my situation.

If I had lied ever in my application I can see the delay. Had his Dad been born in a high risk country I can see the issue.his Dad is American. The lady at Montreal kept saying this was a `good thing``All i can do is hope at this point.

Brads appt is Thursday. I can not enter without my CDN passport they confirmed that at DOS yesterday.:(

SO I scheduled an interview at the embassy in Ottawa for my son to start his US passport CRBA..Then realizing I can not enter without my US passport I called DOS to see if my visa and my daughters had been printed? sent? As other peoples from same day are recieving theirs?? She said I could request my passport back? We certainly never hid the fact my sons father was an American, he was just born here, never lived there..the paperwork had gone all the way through since last May and no one caught it..I didnt know..

I was told we were in "processing" does this mean administrative processing so was my sons situation a red flag? How long does AP take? I read the step by step guide and it says to disregard if they say that at this point but really hard not to worry. Im starting to feel like Im stuck here alone and will be having this baby alone.

So hard to handle when two weeks ago we were decorating the nursery in our new home..I just feel like my world is caving in on me. The dr has taken me off on leave now bc of stress concerns and the baby. Im a total mess..Any advice encouragement would be great..

I agree. They should let us create appointments for in the future. When I was sending out my Packet 3 (when I couldn't book the appointment) I could see that the next available appointment was in 110 days. That's at least still a set amount of time you can look forward to. But ever since I got my Packet 4 I haven't seen a single day open up and I check every 10-15 mins when I am on the computer to see if anything has opened up. I know that Vancouver had open appointment dates but when I tried to switch my case to them, I was told I can't. We should have a choice if the consulate closest to us is full.

Sigh.

This is so frustrating :( I knew the process would be long, but not knowing when I'll get an appointment is worse than actually waiting to a certain date in the future. It's so uncertain!

I have now been trying to get an appointment for over a month for Montreal. I am always checking the and refreshing the page when I am at home but this is really getting ridiculous and wearing down on both me and my fiance. We were so excited when we finally could make an appointment and now we have to keep waiting until a date we don't even know!!

Has anyone at all been able to get through in the past few weeks???
