I'm going to make a puff pastry spinach/feta/swiss cheese sandwich and I bought a container of Butternut Squash soup at Trader Joe's on the weekend. I've only ever had butternut squash soup once and it was SO good. I've thought about making it myself, but it slipped my mind, and then when I saw this, it reminded me of it. I'm going to go look for a recipe if this is good.

When I was home in April, we went to a special dinner honouring volunteers in Nova Scotia (my dad was one of the honourees - yay Dad!). The first course was this amazing squash soup in little ramekins, and the top of the ramekin was covered in puff pastry. It was seriously yummy -- the soup wasn't stringy (sometimes squash or pumpkin soup can be that way if it isn't pureed enough), it was perfectly seasoned (not too sweet), and the puff pastry kept it nice and piping hot. So good! good.gif One of these days I am going to make that for myself!

Tonight, if my husband gets home in time, I am going to gently persuade him ( whistling.gif ) to make me his famous quesadillas with some leftover ground beef.

Ok, here's the recipe:

Cream Cheese Danish Thingy
(makes two rather large danish, easily enough to feed 12 people, 15-18 if you make the pieces really small)

Take one package of puff pastry (I like Pepperidge Farms, you find it in the freezer section and comes in two pieces) and thaw. Usually takes about 45 minutes.

Line a baking sheet with parchment paper (two baking sheets if you think both pastries won't fit) and unfold the puff pastry. Pepperidge Farms fold theirs in thirds, which helps -- the centre will be covered in the filling, the two sides will be cut and folded over. Press the seams together if needed.

Take a sharp knife and begin cutting the pastry into one inch strips, starting from the outside edge and stopping about 1/4 of an inch from the fold line, as if you were cutting fringe on a blanket. Do this on both sides, along the length, not the width.

Filling:

8 oz (one package) cream cheese *
1/2 cup sugar
2 egg yolks
2 tsp grated lemon peel or orange peel **
2 tsp vanilla extract
1 cup blueberries ***

Beat the cream cheese and sugar together until smooth. Add the egg yolks, citrus peel or juice, and vanilla; mix well.

Spoon the cream cheese mixture equally down the centre of the two pastries. It will be a generous amount! Sprinkle with fruit if you are adding some. Fold alternating strips over the filling (at an angle if possible) to give a "faux" braid effect. If you can pinch the ends and tuck under to seal them, go for it, I usually can't.

Bake in a 400 degrees F oven for about 20 minutes, or until the puff pastry has puffed up a bit and it is golden brown. Remove to a wire rack. Refrigerate leftovers.

For an added touch, make a glaze of 1/2 cup icing sugar and 2 teaspoons of whatever citrus juice you used in the filling. Drizzle over the danish while they are still warm. Serious YUM.

*I use fat free, and it tastes great

**I usually use a small splash of orange or lemon juice -- not too much or the filling will be too runny

*** you could use other fruit I guess that matches well with the citrus, or make a fruit sauce or chop finely and spoon over the danish as opposed to cooking it in the filling

This seriously is really simple to put together, but it looks like you spent serious time, you know? wink.gif If it doesn't make sense the way I wrote it here, let me know. Enjoy! smile.gif

I highly recommend it for those who are looking to give a unique and very personalized gift. good.gif

Sowwy....I should have been a bit more clearer on the berries thing. Yeah, I grind my own flour to make bread. I've been milling my own flour for a while now...makes a very good loaf of bread, no preservatives, and when the flour is used within 72 hours it retains all the nutrients. It's not as much trouble as it sounds.

As for dinner tonight...Joel and I are attending Relay For Life at the high school in the county where I teach, to walk some memory laps. There's gonna be lots of food to be had. We're walking in memory of his dad (David Pothier...passed October 2001 rose.gif ) and my momma (Jerrie Ann Edwards...passed December 2005 rose.gif ).

*sigh* I really miss Momma...she got me in the kitchen when I was 10 and started teaching me how to cook. For me, it's hard in so many ways...but especially when I cook. I don't have her here to call and ask "...now how did you do this?"

*hugs for Karen* I've been a part of three Relay For Life (my mom and dad organize the one in my hometown) and they are amazing events. I know that it will be hard for you tonight as you and Joel honour the memory of your mom and his dad. Will be thinking of you both. rose.gif

i love the bread machine....... growing up I saw how much "fun" my mom had with all the kneading and the rising and stuff tongue.gif

I usually only make dough in the machine because like i said my machine's bread cycle is too long.. but it is easy.. once the dough is done you just kind of just shape it and throw it in a pan and let it rise and then bake it in the oven...

good.gif

My mom tried baking her bread in the machine a couple of times, but we didn't like the consistency of it compared to baking the loaf in an oven. So she is like you, Marilyn, she lets the machine do all the kneading and bakes it in the oven. We made some whole wheat/seed bread while I was home in April that was delish!

Hey Carla, I'm making meatloaf tonight! Would you care to share your recipe? Anyone else have a good meatloaf recipe? I haven't made meatloaf all that often, but it's something soon to be hubby really likes and his mom made often, so I'd better get it right! tongue.gif

I'm always trying new meatloaf recipes. This is a little different, and I've made it several times now, and we both enjoy the change. I use chicken stuffing. It's that stove top stuffing mix you can buy at the grocery. I use italian spices as well and not just the thyme. I also get two loaves out of this recipe. This recipe calls for chili sauce on top. I prefer a spicy tomato based sauce with shredded mozarella cheese on top. You could also use instead a mixture of ketchup, worchestshire sauce, and brown sugar.
What I love about meatloaf is making it with what I have on hand and whatever spices I feel like throwing in.

1 1/2 lbs extra lean ground beef
1 pkg (6 oz) STOVE TOP Stuffing Mix for Chicken
1 egg lightly beaten
1 onion chopped
1 tsp dried thyme leaves
1/4 cup chili sauce
Preheat oven to 350 degrees F.
Mix meat, stuffing mix, egg, onion and thyme.
Press evenly into 6 x 4 inch loaf pan sprayed with cooking spray. Bake 55 min. Heat chili sauce in small saucepan.
Spoon over meatloaf just before serving.

Carla, this sounds fantastic and I want to try it! I do have one question -- is the stuffing mix prepared beforehand or just put into the meatloaf as is?

We had some 'normal' food, Pork Chops, potatoes, yams and salad. It was good, funny, nothing tastes the same as it does in Canada (think that might have been mentioned before tongue_ss.gif ) - not bad, just not the same.

Even the yams are a different color (lighter orange) and a different texture. Now i'm sure there are a gazillion different varieties of yams, but they look the same on the outside!

I think I read somewhere that what Canadians think are yams are actually sweet potatoes in the States, or is it vice versa? Anywho. whistling.gif

We were out shopping yesterday and I saw a steakhouse advertised as a Brazilian steakhouse as well, although I don't think it was the same name. They're good eh? What do they do different when cooking steaks? Might be something to check out.

If it is like the one we go to......

You sit at the table and the waiter comes around with a various selection of meats (one at a time) that have been skewered on a long sword and roasted over flame.** They plunk down the sword, tell you what the meat is, and you say "yep I want some of that" or "nope" They then slice off a piece for you and you put it on your plate. You sit there thinking "hmm, this doesn't seem to be a lot of food", but they just seem to keep coming and coming with various cuts/preparations of beef, chicken, pork, lamb, shrimp, sausages, and our favourite, grilled pineapple, until you tell them enough. Mixed with the all you can eat buffet / salad bar (which is amazing at our restaurant) and you basically roll right out of there. It's a bit pricey, but oh so delicious! I don't know what they do in the grilling process, but oh my word, it is so good.

**This is based on how Brazilian/Argentinian cowboys (gauchos) prepare their meals while out on the range, or something like that!

mmmm, Brazilian steakhouse... yup, if you leave one of these places hungry, it's your own dang fault!!! They are pricey precisely because you can get all the meat you desire. For carnivores like myself, ooooh, what a feast. A tip I'd suggest is if you can get to one of these places for lunch (not on a weekend usually), you can get the same food for a cheaper price just because it's lunchtime.
