A Canadian Sister posted this recipe on her blog. I tried it tonight it was wonderful.

Pouding Chomeur ( Poor Man's Cake)







Cake

1 1/2 cup of flour (all purpose)
1 tsp baking powder
1/4 cup butter
1 cup sugar
1 cup milk


Maple Sauce

1 cup maple syrup
1 cup brown sugar
1 cup boiling water
1/4 cup butter
1 tsp vanilla extract ( halal of course )


Instructions;

preheat oven to 325 degrees Fahrenheit

Sift flour and baking powder together in a bowl. Put aside

In a bowl, whip butter and sugar together. then gradually add milk and flour into the mixture alternately.

Pour mixture into a 13x9 inch pan( greased). put aside

In a pot put all the ingredients for the sauce and bring to boil for 2 minutes (stirring often) then pour over the cake mixture. DO NOT MIX.

Bake in oven @ 325 degrees Fahrenheit for 45 mins

* best served with vanilla ice cream when it's still hot.

That looks good! Looks like someone left you a tip. laughing.gif I made couscous 3 days ago. It is really hard to make just a little. lol. Our Tunisian friend that runs a restaurant here has couscous on his menu, but it is really spicy and hot. I dont much care for it that hot.

Occasionally we have to bring a crock pot of soup to sell from the concession stand at my sons soccer games. I made a loaded potato soup and took it at 5pm, right before the girls game started. I went back home to get ready and come back for my son's game at 7pm. I arrived and stopped by to see if the soup was selling. They said, girl your soup was gone in the first 30 minutes. I was quiet shocked. While I was standing there, women were coming up to the concession stand and asking to get the recipe. They pointed at me and said, their she is. I wrote down the recipe and they were copying it for the rest of the game. lol.

Here is the recipe. It is very simple and fast. It makes a lot so use a stock pot or a big crock pot. I think mine is a 6 guart crock pot. If I am just making it for us at home, I half the recipe.

Loaded potato soup

4 cans chicken broth
1- 32oz. bag of frozen diced hash browns
2 cans cream of celery soup
2 cans cream of onion soup
8 oz. block of sharp cheddar cheese (cubed)
8 oz. block of Monterey Jack cheese (cubed)
8 0z. block of Pepper Jack cheese (cubed)
1 qt. half and half

for garnish
bacon, cooked and crumbled
chives/ green onions, chopped
shredded cheese

In a large pot, combine and simmer hash browns and chicken broth, until potatoes are soft. Add other ingredients and continue to cook over medium heat for 30 minutes or until all cheeses are melted. Garnish with bacon bits, chopped green onions, and shredded cheddar cheese.

I made Seafood Bisque tonight for iftar. It was so easy and it tasted really good.

Seafood Bisque

6 oz can of mushroom stems and pieces
2 cans of minced clams
1 can shrimp ( I used fresh shrimp instead and added it at the last few minutes of cooking)
1 can crab meat
1\2 cup of minced onion
1\2 cup of minced celery
2 tbsp butter
2 tbsp of flour
1\4 tsp of salt, pepper, season salt
1 bay leaf
1 cup of cubed raw potato
2 pints of half &half

Drain all the seafood and mushrooms, reserving the liquid. Saute mushrooms, onion, and celery in butter for 10 minutes. Blend in flour and all seasonings. Pour mixture into a large pot. Add all the seafood, potatoes and all liquid held in reserve. Cover and simmer 5 minutes. Add half & half and 1 pat of butter. Heat to a boil. Cover and simmer over low heat for 1 hour. Serves 6

Chorba is a soup, like the minestrone, but has lots of flavor. It is tomato based with chickpeas and spices. Some variations use vermicelli instead of chickpeas. My MIL made this everyday I was there during Ramadan. When I was cooking it today, the smell brought back so many memories of when I was in Algeria.
INGREDIENTS:

* 1 lb. lamb loin chops or beef stew meat
* 2 onions, finely minced
* 2 or 3 cloves of garlic minced
* 3 tomatoes, peeled seeded, then crushed
* 3 carrots, thinly sliced
* 3 medium sized potatoes, chopped
* 2 small zucchini
* 2 celery stalks
* 1/4 cup fresh parsley with stems,
* 1/4 cup cilantro with stems.
* 2 tablespoon tomato paste
* 1 teaspoon black pepper
* 1 teaspoon kosher salt
* 1/4 cup lemon juice
* 1/4 teaspoon tumeric
* 1/4 teaspoon saffron
* 1 1/2 cup dried chickpeas or garbanzos, soaked overnight

(I add some cinnamon and some paprika too)
( Sometimes I add Frik to the soup instead of Garbanzo beans. Frik is something like Bulgar wheat. I add it at the very end and cook for a few more minutes.)
(Some people use vermicelli instead of the garbanzos.)

PREPARATION:
I brown the meat in Olive oil first then add the onion and garlic. Cook those for about 3 mins then add the veggies(except tomatoes) in a large saucepan. Add about 10 cups of water. Using kitchen string, tie the parsley, cilantro and celery together and add that too. You will remove it after cooking. bring to a boil.

Stir in tomatoes and tomato paste. Be very gently and don't stir vigorously. You want the flavor to escape the tomatoes slowly.

Add chickpeas, spice and lemon juice. Slowly stir.

Reduce heat to low and allow to simmer for about 30-35 minutes covered or until meat and chickpeas are done.

I have one of those small electric food choppers. looks like a miniature processor. I put the onions and the garlic in it and chop them very fine before I add them. I then put the tomatoes in and process until they are almost liquid.
Another thing I do is grate the potatoes, zucchini and the carrots instead of chopping them. I also will throw in a whole pepper, maybe a Jalapeno pepper if you want a little kick. Just remove it when the chorba is done.
I cook mine in a pressure cooker. If you dont have a pressure cooker, I dont think 30 to 35 minutes is enough. You may have to cook it longer.

Kefta Meatballs with Tomato & Egg is on the menu for tonight.

I dont go directly by this recipe, I add and subtract from amounts, cause it is hard to go wrong with these meatballs. You may not like as much garlic or onion, just suit it to your taste.
Ingredients:

*1 lb ground lamb or beef
* 2 garlic cloves minced
* 1 small onion minced
* 1/2 teaspoon allspice
* 1 tsp of cinnamon
* 1 teaspoon paprika
* chopped fresh parsley (or chopped fresh coriander)
* 1 egg
* Salt & freshly ground black pepper
* Olive oil for frying
* Tomato sauce (see recipe below)
(The recipe does not call for it, but I put breadcrumbs in this recipe. My MIL puts rice in her meatballs.)

Method:

1. In a mixing bowl, mix the meat, garlic, onion, spices, egg, Salt and pepper and the parsley until it is all thoroughly mixed, knead to a smooth mixture. Then wet your hands and roll into 24 walnut sized balls and set aside on a tray.
2. Heat the oil in a fry pan and cook the meatballs until golden brown, then place the meatballs in your tagine. (optional, I just use the same pan, since I dont have a tangine)
3. Pour the tomato sauce over the meatballs, simmer on the stove top for about 15-20 minutes, and stir so that it does not stick.
4. Break the eggs on to the sauce and cook until the eggs are just set.
5. Sprinkle with the chopped parsley (or coriander) and serve immediately.

Tomato Sauce

Ingredients:

* 400g canned tomatoes
* 1 onion finely chopped
* 2 garlic cloves minced
* 1 dessertspoon tomato paste
* 1 dessertspoon honey
* Salt & freshly ground black pepper
* Olive oil

Method:

1. Heat a little oil in a saucepan; add the onions and garlic then cook for about 5 minutes.
2. Add the tomatoes, tomato paste & honey then cook for about 10 minutes and season well

This is a very fast and easy lamb recipe. I tried it out last night and Hachemi loved it. I thought I would share.

Lamb chops with peppers

4 lamb chops cut 3\4 inch thick, about 1 1\4 lbs
Non stick cooking spray ( I used olive oil)
1 medium green sweet pepper, cut into julienne strips
1 medium red or yellow pepper cut into julienne strips (I used both)
1 small zucchini cut into julienne strips
1\2 cup of thinly sliced leek. (i didnt have this so used thin sliced onion)
1 clove of garlic, minced
1\2 cup of water
1 tsp of instant beef bouillon granules
1 tsp of dried basil, crushed
1\2 tsp of dried oregano crushed
1\8 tsp of black pepper

Trim the fat from the chops. Spray an unheated large nonstick skillet with cooking spray. Preheat over medium high heat. add chops and cook about 4 minutes or until browned, turning once. Remove the chops from the skillet, reserving drippings in the skillet. Add the sweet peppers, zucchini. leek and garlic to the reserved drippings. Cook and stir for 3 minutes. Return the chops to the skillet. In a small mixing bowl stir together the water and bouillon granules, basil, oregano and black pepper. Pour over pepper and zucchini mixture. Bring to boil then reduce heat. Cover and simmer for 12 to 15 minutes or until chops are slightly pink in the center. I served it on a bed of rice. Makes 4 servings.

I found this recipe for moroccan bread and I cooked it yesterday. It was pretty good and Hachemi liked it. You can use the dough cycle of your bread machine, which makes it much easier to make.

7/8 cup of warm water (7ounces)
2 1/4 cups of bread flour
3/4 cup of semolina flour
1 tsp of anise seed
1 1/2 tsp of salt
1/2 tsp of sugar
2 tsp of active dry yeast

Place these ingredients into you bread maching in the order that is recommended by the instuctions on your machine.
Select DOUGH cycle and press start.

When the dough cycle is done, take the bread from the machine and punch it down. Divide dough into 2 halves, and shape into balls. Flatten the balls to a 3/4 inch thickness. Place them on a floured baking sheet. Cover with towels and let them rise until double in size. (about 30 mins)

Preheat oven to 400 degrees. Brush the top of each loaf with olive oil, and sprinkle with sesame seeds (optional)
####### the tops of the loaves all over using a fork.

Bake for 20 to 25 minutes in the preheated oven, or until the loaves are golden and sound hollow when tapped. Best when served warm.

Ooo, those look great. One thing I've learned to do when I buy spices is to take my husband with me and make him smell everything before I buy it, so I don't end up with things he doesn't like. I found zatar at penzy's and was like, oooo ME spice! He'll love it! Ummm, nope, he doesn't like zatar :unsure:

The Imam from the mosque has a small Middle Eastern restaurant. After Friday prayers we went to eat lunch there. Hachemi ordered zatar bread with his meal. He really liked it. It wasnt to bad. I really enjoyed the food. I cant wait to go back again. Has anyone heard of "black seed", the nigella seed. Hachemi uses it as a home remedy for a variety of things. If anyone has access to an arabic store and can get some for me, I would appreciate it so much. :thumbs:

Birth certs are valid for ever.

Police certs tend to be considered valid for 1 year.


Moroccan and Algerian birth certificates have only a 3 month validity. Every time they need their birth certificate and it is over 3 months old, they have to go to the public office and stand in line for hours to get a new one. Which suxs for sure. I dont know if it matters to USCIS though since US birth certificates dont expire and YuAndDan said.

I agree with what is written by John&Jean. Do not volunteer any info. Just answer what is asked truthfully. Depression should not be a reason to withhold a visa, unless you are a danger to yourself and others. If depression is the only diagnosis then I would think the letter from the doc will be ok.
At least it shows you were treated for it.

It will have to have his original signature. And also he will have to sign in his native language in the box below that. What I did was fill it out online and saved it to my computer. Then I emailed it to him. He printed all four, signed them and sent them back to me in the mail. It saved a lot of time. Hope that helps.

I have not been a member long, and I was really confused about the process. But this website has a wealth of information that gave me the confidence and knowledge to do this myself. Use the search feature to help answer many of your questions. Beleive me the same questions you have, I had, and other people had are probably answered somewhere on this site. By all means ask if you dont find an answer. There are a lot of really smart people here(smarter than me anyway). Use the guides and Example forms on this website. Look at the blue tabs at the top. They helped me so much. Good luck with you visa.

I don't really understand. Are you saying he is waiting on a divorce, or copies of the divorce papers. He has to be legally divorced at the time of submission of the petition. And copies of the divorce decrees have to be included in the I 129f petition. I would suggest you wait on the divorce or you have copies of the decree to prevent a delay with your petition.

I am not that far in the process, but from what I have read on VJ it would cause a big delay at the interview stage of the process. In my opinion, you better get all police reports from everywhere you lived since 16.
