Hey I'm game! The invitation is also extended to you if you're in the Bay Area (SF)! And when you two (means you and groom) do come? I'm making Turkish cay for you with Adana Kebaps and some homemade Baklava (although, I am not a master at the Turkish Baklava ... yet!

Then!! Maybe Shawn & Sonoko can join us and we'll all go to theatre and when we are all sightseeing, we'll stop by the SFO airport and pick up Wendles & Sammy cuz her fam is from Los Angeles... it's a short flight up here to SF!

When Bec & Dipu arrive that next moring because they have a work seminar, we can gift her with little sailor dresses for their new baby they'll be expecting! LOL And, Nicola, hubby and their 9 kids will join us at the Golden Gate SF Zoo! When Kiria & Daniel just happen to be there, we'll all walk over to the California Museum of Art and see the big fish in the tank swimming around us in the room. We'll all carry on and go to the Wharf, and who do we meet there!? YES IT's DIZ and MR LOXY !!!!!!!

And we go to the Jazz club right there and eat clam chowder from a sourdough bowl... and Hope& Sun who are never last to arrive await us all! There sitting with them is Nea & Olu, Lee & Jenniebee, Ben & Gininda, Lise & Michael! Weeeeeeeee!!!


Dreams do come true yanno!? ..... ok my bulldog just passed gas and i'm about to faint. lol omg............

Dipu and I have been “arguing” for weeks over this recipe stuff. He doesn’t understand why anyone would use a recipe…a cook should just cook. And if he were going to turn in a recipe, it would be for cheeseburgers because that’s what he loves. Sooooo, I’m turning in two of my favorite Indian dishes and my Dipu’s favorite too :D

Chicken Tikka Masala
Ingredients
Marinade:
1 cup plain yogurt, whisked until smooth
3 tablespoons Ginger-Garlic Paste, recipe follows (or 1 tablespoon grated fresh ginger and 3 cloves garlic put through a garlic press or finely minced)
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

1 pound boneless, skinless chicken thighs, poked with a fork, and cut into large bite-sized chunks

Sauce:
2 teaspoons olive oil
3 tablespoons butter
1/3 cup Ginger-Garlic Paste, recipe follows (or 6 cloves garlic and 2-inch thumb ginger minced)
2 serrano peppers, minced (seeds removed if you don't want it spicy)
2 tablespoons tomato paste
1 teaspoon garam masala
2 teaspoons paprika
8 Roma tomatoes, diced
1 1/2 teaspoons kosher salt
1 to 2 cups water
Oil, for grilling
1 tablespoon dried fenugreek leaves (optional)
1/2 cup heavy cream
Minced fresh cilantro, for garnish
Cooked rice, naan, or crusty piece of bread, for serving

Directions
For the marinade: In a large bowl, mix together the marinade ingredients. Add the chicken and toss to coat. Marinate at least 30 minutes, or in the refrigerator up to overnight.
For the sauce: When you're ready to make the curry, place a large skillet over medium heat and add the olive oil and butter. When the butter has melted, add the Ginger-Garlic Paste and serrano peppers. Saute until lightly browned around the edges. Add the tomato paste and cook until the tomato has darkened in color, about 3 minutes. Add the garam masala and the paprika and saute for about 1 minute to draw out their flavors.
Add the tomatoes, salt, and 1 cup water. Bring to a boil, turn down to a simmer, and cook until thickened, about 20 minutes. You may need more water depending on how much liquid the tomatoes give off.
Meanwhile, fire up your grill. When it is nice and hot, lightly brush it with oil. Place the chicken on the grill, shaking off some of the excess marinade. Cook until it's charred, about 2 minutes on each side. (Don't worry that the chicken will still be a little uncooked, it finishes cooking in the sauce).
Pour the sauce into a blender or food processor, or use an immersion blender, and process until smooth. Pour back into the skillet and bring back up to a boil. Add the chicken and fenugreek leaves, if using. Take the heat down to a simmer and cook for about 10 minutes. Add the cream and stir through. Garnish with minced fresh cilantro, and serve over rice, with naan, or a crusty piece of bread!
Ginger-Garlic Paste:
1/2 cup cloves garlic, whole
1/2 cup fresh ginger, peeled, cut into 1/2-inch slices
1/4 cup canola oil
Throw the garlic, ginger, and canola oil in a mini-food processor and let it go until it forms a semi-smooth paste. There will still be tiny little pieces in there, but overall, it should resemble a paste.
Save what you don't use in a small glass jar. It should last in the fridge for 2 to 3 weeks. It's a delicious addition to marinades, pasta sauces, stir fry sauces, slow-cooker recipes, gravy etc.

Butter Chicken (Indian Chicken in Tomato Cream Sauce)
Ingredients
Spice Blend:
1 tablespoon garam masala seasoning
1 1/2 teaspoons ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon cayenne

Sauce:
3 tablespoons butter
1 large onion, chopped (about 1 cup)
2 teaspoons jarred minced garlic
1 tablespoon tomato paste
1 (15-ounce) can tomato sauce
1 (14 1/2-ounce) can diced tomatoes in juice
1 skinless rotisserie chicken, boned out and pulled into 1 1/2 by 1/2-inch chunks
1 (10-ounce) box frozen peas, placed in a colander and run under hot water to thaw
1/3 cup heavy whipping cream

Hot basmati rice, for serving
Naan bread (you can get at Trader Joe’s)

Directions
To make the spice blend: Stir the ingredients together in a small bowl and set aside.
To make the sauce: Melt the butter in a 12-inch nonstick skillet over medium heat. Add the onion and cook, stirring frequently, until the pieces just begin to turn gold, about 5 minutes. Add the garlic, tomato paste and spice blend, and cook for 1 minute, stirring constantly to prevent burning. The spices will be fragrant. Add the tomato sauce and diced tomatoes and stir will. Add the chicken pieces, spoon the sauce over the top and bring to a simmer. Turn the heat to low and cook, uncovered, until the chicken is warmed through and the sauce is flavorful, about 10 minutes. Stir frequently. Remove the chicken to a serving dish and cover to keep warm.
Shake any excess water from the peas. Add the peas and cream to the sauce in the pan, stir well and heat through. Do not boil. Spoon the sauce over the chicken. Serve with rice and warmed naan bread.
Variation: If you prefer shreds of chicken to whole pieces, remove the skin from the chicken and pull the meat into large chunks by hand. Add to the pan along with the garlic, tomato paste and spiceblend. Cook for 3 minutes and then add the tomato sauce and continue with the recipe. Serve over basmati rice or with naan.

Cajun Burgers – Cajun to celebrate my hometown and burgers for my Dipu!
This burger recipe is filled with delicious flavor. Not only do the patties have a Cajun flare, but there is also a mild spiced barbecue sauce to accompany it.
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes
Yield: Makes 4 1/4-pound burgers

Ingredients:
1 pound ground beef
1/4 cup barbecue sauce
1 egg
3 green onions, chopped
3 tablespoons dry bread crumbs
1 tablespoon Cajun seasoning
1 tablespoon prepared mustard
1 teaspoon Cajun seasoning
4 slices Cheddar cheese

Preparation:
Preheat grill for high heat. Mix ground beef, egg, bread crumbs, green onions, mustard, and 1 tablespoon Cajun Seasoning in large bowl. Form mixture into 4 patties. In a small bowl, combine 1 teaspoon Cajun seasoning into barbecue sauce. Lightly oil grill and cook patties for 5 minute per side, or to desired doneness. At the end of cooking, place cheese on patties and serve over burgers topped with seasoned barbecue sauce.

Lee, don't lose hope yet for your July 9th date. If you get the Evidence in ASAP then you might see the NOA2 fairly quick (like a week or two after they get it). When they get it at NVC, evidently, things are said to move much faster from there.

You said your Divorce papers look cheezy: All you needed to send in was the Judgment of Dissolution. This is the finalization paper signed by the Judge, dated and has the County & State Seal on it --- seal is usually in purple or coloured ink. Make a FEW colour copies of this so the Seal shows up clearly. Do not write on the front of this, or anywhere there is print [ if you have to send it in again]. Only write on the back of the document with the WAC# and your names: Petitioner/ Beneficiary.

If you are unsure of the "label over the area" where JB's addy was suppose to go, prep a new form or letter and CLARIFY Address. Then, attach the corrected form on top of the one with label and write a brief statement, which you sign and date, to be 'true and correct". ASK if you don't know how to word a sworn statement. MAKE COPIES!!

*** NEA (GSummit) --- Do you think that Lee should just write an Affidavit of JB's correct Address and then attach that to the original REF Document that he put labels on? Thoughts Please?


Lee, your passport fotos should be done properly as directed on the USCIS instructions 2"x2" or, 5 x 5cm's... Same. Costco or Sams does them as well as Walmart and they cost very little; I think about $5-10 bucks. It's not worth it not to take every precaution and poise ourselves prudently when it comes to our Visa and being away from our Bride/ Groom (as you can see now if that was what the RFE was about) .

OK Rex, you got your homework cut out for you now... get with it! ROLLLLL with it, it's going to be OK

PS: Lastly, if you have a scanner, or maybe go to Kinko's / FedEx copy store: Take scans of actual documents that you did send in, or will send in. This is what I did and I cannot tell you how many times I went back to look over and check our papers if I had thought I missed something, or had a question of how I answered something, etc. Also, then if any of our documents or files 'get lost' (GOD FORBID), then you can easily print off an extra copy of the exact form you had already sent in! I think I made 3 duplicate, exact files: One for him, One for me and One for USCIS.


I think the affidavit would be helpful. Also if there is any proof of address (utility bills, lease, etc) to attach as exhibits to the affidavit, it would go further in proving address. Good luck!

Ola and Nea (Gsummit)... I bet you have a good recipe for pounded yams or puff puff's right?! lol I just called my Nigerian sister (from fellowship) and asked her for the yam recipe! They think I am crazy because I don't eat it with the soup, I eat it with the stew ... that hot one that makes me sweat beads down my face. They make me sit by the fan now when I eat because they say, "Baba Tunge! Sistah Mari, she gonna faint" lol lol ... I haven't learned to perfect that darn stew recipe because every Nigerian I ask how to make it, procrastinates and they move back home to Nigeria and then I get nothing! LOL So since Ola is COMING TO AMERICA... you can't run from me and must share recipe (to represent all of Nigerian cooking at its best!) :lol:

Mari, you are a miracle worker! :wow: I've been begging this man for recipes for weeks and you got further than I did in one post. You must teach me your secrets or I will be bugging you to help me when he is being hardheaded. The story of the ID name - GSummit came from a friend of mine jokingly asking me when the gsummit would commence as he knew I got on skype every night to talk to my baby. He said it was a meeting of nations lol. The beautifulnpoppi came from the fact those are our nicknames for each other. I have never tried Turkish food but I have had Filipino food. After the recipes are all gathered we can have international food night at least once a week though.

Did you know on Friday nights I'm a Nigerian? lol, I fellowship with them, and since I'm a foodie, they say I'm Nigerian on Fridays! LOL You tell that husband (to be) of yours to bring you some beautiful dresses full of colours too! Must tell you they tried to put the head scarf on me once and they said, "your hair too soft sistah mari" LOL And, it made my skull look GIANT and lop-sided! ha ha. I do own one wrap around 2 pc Nigerian dress in lovely light blue.

Nigerian on Fridays :rofl: Hilarious, I will have to use that one! I will try to get the recipes from him but dont hold your breath. He is hardheaded and must not have learned to share in kindergarten. But as soon as learn to make them from my other Nigerian friends I'll be sure to share. We went shopping for dresses while I was there and the colors are so vibrant and beautiful. I hope to go back soon and collect more. Although I wont make the same mistake of not getting them tailored while there because they try to charge an arm and a leg for the same service here. Lol, they had fun putting the head scarf on me too and he almost collapsed when he walked in and saw me wearing it.

Congrats to all those who have been touched, fondled and approved! I am very happy for you and hope to join you in the very near future. Coming to this forum makes me feel a bit less crazy for checking our status every other day like its the antidote lol. I warned my fiance that I would throw him under the bus as he has been less than cooperative in giving me Nigerian recipes for the collection. He has every excuse in the book so I just found my own. I hope he likes Italian, Asian and American foods everyday when he gets here since he is lazy about sharing recipes from his country lol. So that being said, here is the recipe for Jollof rice which I love and hope you will too. Please take Nigeria off the list of shame lol

Jollof Rice

4 cups white rice
2 tomatoes (or 8 ounces tomato sauce and 3 ounces of tomato paste)
1 bell pepper
Onion
Salt
Dry red pepper (like cayenne)
1 cup meat broth (or 4 magi/bouillon cubes)
Water


1. Unless the rice is pretty clean, you will want to rinse it before cooking it.
2. Put the rice and about 6 cups (or about 1½ liters) of water into a pot and place on high heat. (Some people prefer to boil the water and add the rice to boiling water. This is fine too.)
3. If you are using fresh ingredients (the tomatoes and pepper) blend them until they are smooth in texture (you can also grind the onion with this mixture).
4. Let the rice cook 10-15 minutes.
5. Add either the tomato/pepper mixture or the tomato sauce and tomato paste. If you have not added the onion, you can slice or dice it now and add to the pot, depending on how large you like your onions.
6. Add enough water to allow the rice to complete cooking (since you will not be draining the rice, it is better to add too little and check up on it often, than to add too much).
7. If you have any meat broth from boiling any meat, you can add it to this as well. Otherwise, unless you are a vegetarian, suggest adding about 4 magi cubes for taste.
8. Add about 2 teaspoons of salt, and about ½ a teaspoon of dry red pepper (as the rice is cooking, or as you are eating the finished product, you can add more of either one of these so I really suggest starting out small, also useful if different people who will be dining have different tastes).
9. Allow the rice to continue cooking until the rice is soft. If it is not dry at this point, then switch the heat to low to allow it to dry the excess water without making the rice much softer. (Also, some people prefer to bake it once they've added the ingredients...I suggest 350 degrees or so.)
10. Once cooked, add more salt or pepper to it if you wish.

Based on some reviews for the Lagos office, WHEN (not if) he is approved (in Jesus name)we could get his visa in hand within 3 days of the interview. I'd like to arrive a day or two before the interview and stay those 3-5 days until he can fly back with me to the US. Depending on how things go in the next few months I may have to wait until he has visa in hadn but I'd much rather be there in advance to lend my love and support.

Now you have me cracking up thinking of showing up for visa interview looking like Gollum/Smeagol. It burnsssss us! I dont blame Kadir for burning the road up if he lifts that veil and sees anything like that creature under there. Ola would be gone so fast there would be nothing but a puff of smoke where he once stood. :rofl: Thanks for the much needed laugh

Thanks Mari for the correction. I have updated the date on my timeline now. I also had a view comments based on past posts

1. As an attorney with many immigration attorney friends, its not necessary to hire an attorney unless you've been previously denied, they say your claim is inadmissible or you simply think there is no way it will be approved. I have been advised and found out for myself that as long you read very carefully and follow the instructions to the letter, you will be fine.

2. I would recommend reading Nolo's Fiance' and Marriage Visas. You can either purchase it online or do like I did and get it from the public library for free. Between the instructions, checklists, and other information in that book and visajourney I feel very confident that our application won't have any issues on our end.

3. We also set a tentative wedding date of September 3 on the beach and I pray with all my might that we dont have to push it back. Its nothing big, just about 50 guests at a beach house.

Our flight was cancelled too Gsummit... how disappointing and frustrating huh? We have to wait 3 more days here in Mexico before the next available flight out :-/


I tried to see about changing the flight to avoid JFK altogether and was told the change would cost $650! :o I am just hoping they wont change it again since our wedding is in 7 days and we have things to do. Hope everyone gets out safe and soon.

Hey gang. Ola passed his CCNA certification exam today! I am so proud of him and all he is doing to be with me and to ensure we have a successful future together. I know he is sitting at the hotel preparing for bed before that early morning walk to stand in line for the interview. I pray that my next post is that he has been approved and we are one step closer to being together again for the first time since December 4th. Sending all my love and prayers to the Decemberite family. I'm thankful that Im not on this crazy journey alone or I'd really be a mess.

My best guess is they transferred cases from mid December to mid January to TSC. So VSC can bring processing time with in 5 month? Let's hope so. It would benefit everyone in VSC right now.

BUT the text is the same!!!!  "...your Alien Registration Number was changed relating to your I129F.." ((( but we wait for NOA2.. do they continue to check documents or it is a mistake? wonder how mauch time will it take to make any dicision?  thanks

I think it might have been any immigration cases with the country China. Everything relays to China is slow. I have read about it somewhere. It's about the percentage of total immigrants coming here. Well, I hate to say this, but we are the the real victims of big country politics. I heard calling the night manager in NVC helps. Ask the State department to expidite your case. I am sure that this point, they will move it very fast.

Congratulations! Like you, we didn't want to believe until we had the hard copy on hand but an approval is an approval so hope you enjoy the moment like we did when we saw the approval online!!! And by the way, we got the hard copy after 5 business days.  Cheers!
