Thanks all! I had a wonderful birthday, my husband took the day off work and we did some shopping, saw Marley and Me (great movie!!) And went to CPK. It was so good, I got a Tostada which is a Mexican Pizza, emmm yummy in my tummy. The best part of the dinner was me getting carded at the ripe old age of 29 it made me feel young tongue.gif

I found this recipe online, going to try it out tonight with some quesedillas:

"Homeade Potato Chips"


* 2 medium Yukon Gold or Idaho potatoes, peeled and sliced into 1/8-inch slices on a mandoline or other handheld slicer
* 3 tablespoons olive, canola, or peanut oil
* Salt and freshly ground pepper

Preparation

Preheat the oven to 400°F. Slice the potatoes into a bowl and immediately toss them with the oil. Season lightly with salt and arrange them in a single layer on a baking sheet. Bake in the oven until golden brown — about 12-15 minutes. Season again lightly with salt and pepper when they come out of the oven. Transfer to a rack to cool for maximum crispness.

Weighing your options
If you want to be a little more daring, don't limit yourself to salt and pepper — you can season with ancho chile powder, ground cumin, minced herbs, toasted sesame seeds, ground nori (toasted black seaweed sheets used to roll sushi) — really anything you like. Just be sure to season immediately after the chips come out of the oven, while there is still some residual oil for the spices to adhere to.

Eeeek they might taste a bit funny LOL.... well last resort you could have a "taco salad" just throw everything into a bowl and mix it together! If you have any tortilla chips you could dip too that's what I do if I have no taco shells

I used to boil mine but found them to be a bit soggy and sometimes the filling would come out. I was probably doing it wrong mind you tongue.gif Usually to pan fry the directions say to soak them in HOT water for about 3 minutes. Then I use a bit of vegetable oil and fry up the onions first, then add the perogies and cook on each side for about 4 minutes, until browned. I put old bay seasoning on mine and add some soy bacon bits in there, sooo good. Then I dip them in light sour cream, salsa, or sometimes ranch dressing!! They are nice and crispy pan fried!

Get them next time! I got the cheddar cheese ones, I've eaten alot of perogies and Wegmans are the very best!! Actually I got alot of store brand food at Wegmans and it was all pretty good, Wegmans is my new favourite grocery store!

So today is the beginning of my meatless venture. I am having perogies tonight because my original dinner plan of crispy fried tofu with a three bean salad fell through because I am just too damn tired to cook from shopping all over the place today.


MMM I LOVE perogies I'm having them for dinner too!! I usually fry them in the pan with some onions and they are really good dipped in salsa! You should try the Wegmans store brand perogies, they are the best yet I've ever had. Thick and stuffed!

They are best fresh out of the oven!! Here are a few tips:

Substitution
Double the garlic hit by replacing the 2 tablespoons butter with garlic butter.
Variation
Cut warm biscuits horizontally in half, and fill with scrambled eggs and a slice of cheese for Cheese-Garlic Breakfast Sandwiches.

These pierogies were frozen - potato and cheese kind- but they are quite good. You can also boil them if you don't want to pan-fry them and are worried about extra fat.

Last night I did stuffed zucchini again - had another 18" monster zucchini:-). Browned ground beef with onions, added the chopped zucchini innards scooped from the shell, added garlic chopped and then the rest of the left over vodka cream spaghetti sauce from the night before and threw in a small package of corn bread mix, hehehe. Spread it in the scooped out zucchini, topped them with sliced fresh tomatoes, then baked them at 350 for an hour. Joe and I had left overs for lunch and there is still half a zucchini half for later:-).

Tonight I'm doing something simple - salad plates (ok, took a quick break from writing this message to put the potatoes on for potato salad). So, Blue Cheese Potato Salad, devilled eggs, sliced cucumbers and tomatoes with cottage cheese salad, cold ham and fresh pumpernickel bread.

I don't do measurements well so I will approximate - here is the Blue Cheese Potato Salad:

4 potatoes cubed, boiled until soft,
add in 1 tbsp balsamic vinegar, 2 Tbsp parsley; 1 tabspoon Mrs. Dash's spicy blend; 1/2 tsp celery seed; 1/4 tsp fresh black pepper;
add 1 small can sliced water chestnuts; 1/2 cup diced celery; 1/2 cup chopped green onion or chives,
Add Blue Cheese salad dressing - enough to blend everything together nicely without being too wet
Stir together
Sprinkle with paprika to serve.
Makes 4 servings; can be served warm or chilled.

Are you sure the Hawaii trip wasn't before the separation? It does take a while between filming and airing. Also, if they were basically living separate lives but still "together" the official date of separation can be based on that date as opposed to the filing date or the moving out date.


Yeah the Hawaii trip was last year, and they started living apart 2 years ago (living in seperate bedrooms, having problems). So the official date of separation was before they renewed their vows.

Maybe they were hopeful it would rekindle the relationship.


Or they wanted to take advantage of the free trip to Hawaii, all expenses paid by TLC tongue.gif
